A HEALTHY START TO THE DAY
Food is a love of ours, after a beautiful morning of a yoga and meditation eating a healthy meal is so important and nourishing to the mind and body. Below is our favourite breakfast recipe :
• 1/2 a ripe avocado
• 2 slices of gluten free bread, preferably organic if available (otherwise a healthy sourdough bread can also be lovely if able to tolerate gluten)
• squeeze of lemon
• 1 whole ripe tomato
• olive oil to drizzle
• 2 stems of coriander leaves or basil
• salt and pepper
• sprinkle pumpkin seeds
• sprinkle flaxseeds
Method:
Very easy, toast your bread then scoop out your 1/2 avocado with a spoon and slice into long strips, dice your tomato and layer both avocado and tomato onto toasted bread, drizzle with oil, add salt and pepper and coriander leaves, squeeze some lemon juice onto topping – lastly finish with pumpkin and flaxseeds
Accompany this with a lovely chai or herbal tea, or a lovely brew of organic coffee.
